Detailed Steps for Cooking Garlic Steamed Shrimp with Glass Noodles
Soak the glass noodles in water until soft.
Remove the heads and veins from the shrimp.
Cut the shrimp along the back to butterfly them.
Make a few vertical cuts on the shrimp meat as shown in the picture, without cutting through the meat. (This is to prevent the shrimp from curling after steaming.)
Cut the soaked glass noodles into two sections and lay them flat on a plate.
Arrange the butterflied shrimp on top of the noodles.
Finely chop the garlic, green pepper, and red pepper.
Heat oil in a pan until 60% hot, fry half of the garlic until golden brown, then turn off the heat and add the remaining garlic to infuse the flavor with the remaining heat.
Add Lee Kum Kee soy sauce and some water to the garlic, adjust salt if needed.
Pour the garlic sauce over the shrimp, steam over high heat for 5-8 minutes after the water in the steamer boils. Garnish with chopped green and red peppers. (Since the shrimp is butterflied, it cooks quickly, so do not steam for too long.)
