Milk Tea: as needed; Red Beans: as needed; Mint: as needed; Tapioca Starch: as needed.

Coconut Milk: as needed.

Grass Jelly Dessert Cooking Steps
Steam the taro and sweet potato until cooked.
Mash and cool the steamed ingredients into a paste.
Add tapioca starch until the mixture is not sticky.
Cut into even pieces or use a mold to shape, boil water and add the taro balls, stir clockwise constantly with a spoon to prevent sticking, scoop out and soak in ice water for a chewier texture.
Add red beans.
Add grass jelly.
Add coconut milk and milk tea (prepare and chill in advance).
Add a sprig of mint, and it’s ready to be served! Any leftover taro balls can be frozen and cooked directly without thawing when needed!
