Detailed Steps for Making Green Bean Cake
Soak the green beans in advance for 10-12 hours.
Remove the skin.
Steam the green beans until cooked.
Prepare all the ingredients.
Use a food processor to mash the peeled green beans into a paste.
Put softened butter in a pan and add the green bean paste. Stir-fry over low heat.
When the oil and paste are completely blended and the green bean paste is slightly dry, add powdered sugar and maltose and continue to stir-fry until it forms a ball.
Use a scraper to shape the fried paste into a ball and let it cool.
Sift the paste (this step is very important and troublesome, but sifting makes the texture smoother. It can be skipped if not required).
Add matcha powder and cranberries to the sifted green bean paste and knead until evenly mixed. Divide into small balls of 30g each.
Press the paste into shape using a mold.
