Steps to Cook Green Tea Pastry
Oil pastry ingredients: Medium flour 100g, butter 30g, water 40g, salt 1/2 tsp.
Oil crust ingredients: Low gluten flour 100g, butter 65g, green tea powder 10g.
Mix the oil pastry and oil crust ingredients and knead into a dough (the oil crust is difficult to form into a dough, so I added a little water).
Roll the oil pastry into a round shape and wrap the oil crust inside.
Seal the edges facing down.
Roll into a rectangle, fold both sides towards the center line.
Fold again, let it rest for 20 minutes, and then repeat the folding process four times.
Roll into a rectangle and roll it up.
Cut into 16 pieces of about 20g each.
Roll the pieces into circles, wrap the prepared filling into a ball, and the filling should be about 20g (I was greedy and used 25g, which made it more difficult to wrap).
My child helped me take the picture, and I used my left hand’s tiger’s mouth and right thumb to wrap the filling.
All wrapped up, the pattern is not very clear, probably because I pressed the dough too hard when I put the filling in.
180 degrees for 25 minutes.
It’s done, maybe the heat was too high, it shouldn’t have turned yellow, and the pattern is not very clear, which is very different from what I expected.
