Steps for Grilled Eggplant
Pierce the eggplant with a bamboo skewer from the root and grill it by rotating it over the fire.
Be careful, the eggplant may sometimes spray hot air during grilling.
When the skin of the grilled eggplant wrinkles and the inside of the eggplant becomes soft, it is ready. Note: When buying eggplant, choose the thinner ones, which are easier to ripen.)
Let the grilled eggplant cool down and remove the skin.
If there are any parts of the eggplant that are not grilled well and are hard, remove them.
Tear the eggplant into thin strips along the length and set aside.
