Main Ingredients:
1 Grouper; 5g Peanut Oil; 5g Scallion; A pinch of Sichuan Pepper; 5g Vinegar; 2g Strawberry Wine; 2g Salt; A pinch of Chicken Essence; A pinch of White Pepper Powder; 1000g Water; A small amount of Flour.

A small amount of Scallion Leaves; Some Star Anise; Some Coriander; Some Ginger.

Steps for Cooking Grouper Soup
Clean the Grouper.
Cut the Grouper into flower shape and sprinkle some flour on it to prevent it from breaking when frying.
Heat the oil in a pan. Fry the Grouper in the hot oil.
Flip the Grouper over when it turns golden brown.
When the other side is fried, add scallion, ginger, Sichuan pepper and star anise to stir-fry until fragrant.
Add vinegar.
Add strawberry wine.
Add salt.
Add water.
Cover the pot and stew over medium-low heat for 30 minutes.
The fish soup turns white. Add chicken essence. I used vinegar, which affects the color of the fish soup. If you use white vinegar or rice vinegar, the color will be milky white.
Add white pepper powder.
Transfer to a plate.
Wash and chop scallion leaves and coriander.
Sprinkle scallion leaves and coriander on the fish soup.
