Detailed steps for cooking Guo Ta Dou Fu (Pan-Fried Tofu)
Cut the tofu into slices about 5mm thick, sprinkle some salt on both sides, and marinate for about 15 minutes. Cut the scallions and ginger into thin strips.
Beat the egg, coat the tofu with a thin layer of cornstarch, and dip it in the egg mixture.
Fry in a pan until both sides are golden brown.
Push the tofu to one side, add the scallions and ginger, and stir-fry until fragrant.
Pour cooking wine, soy sauce, 1 small bowl of water (chicken broth is better if available), oyster sauce, sugar along the edge of the pan. Bring to a boil over high heat, then reduce heat and simmer.
Cook until the sauce thickens, then sprinkle with chopped scallions.
Remove from heat and serve.
