Steps to cook Hainan Coconut Rice
Grate the coconut meat and stir-fry with brown sugar in a non-stick pan. Set aside. Prepare the ingredients.
Mix the flour and glutinous rice flour together.
Add white sugar to the mixture and mix well.
Slowly pour in boiling water and knead into a dough.
Let the dough rest for 20 minutes.
Bring water in the steamer to a boil.
Take 35g of the dough and roll it out into a thick center with thin sides.
Place an appropriate amount of brown sugar coconut filling in the center and wrap it tightly with your hands.
Place the wrapped dough on a steaming rack and steam for 10 minutes.
