【He Guozi】 Mizuki Cooking Steps
Mix 15g of glutinous rice flour with 25g of kudzu root powder
Add 170ml of water and mix well
Add granulated sugar and sifted low-gluten flour, mix well
Prepare the steamer with boiling water
Sift the mixed batter to ensure no lumps
Pour 2/3 of the batter, steam over medium heat for fifteen minutes until the batter solidifies
Evenly spread sweet red bean paste on the surface
Pour the remaining 1/3 of the batter, steam over medium heat for about fifteen minutes until the surface solidifies
Let it cool, then cut into pieces. Personally, I find that refrigerating for 2 hours in the fridge gives a softer, chewier, and sweeter texture
