I used cooked rice, which shortens the cooking time. If using raw rice, it is recommended to soak it before cooking. It takes about 6-7 minutes.
The finer the ginger slices, the better. They can be added with the rice so that a little ginger goes a long way in flavor.
It’s best to marinate the shrimp with salt for better flavor.
As the water level in the rice rises, add the shrimp. Cook for 1-2 minutes, then turn off the heat and add the green onions.
Put some ground pepper in the bowl, do not cook it in the pot as it will lose its flavor.
Drizzle some sesame oil over the congee in the bowl.
