Steps to Make Heart-shaped Dragon Fruit Mousse
Prepare the ingredients and put the digestive biscuits into a blender or food processor to make biscuit crumbs.
Melt the butter in a double boiler.
Mix the digestive biscuit crumbs and melted butter together and press the mixture into the bottom of a cake mold. Chill in the refrigerator for half an hour.
Put the dragon fruit into a blender and select the fruit and vegetable function to make dragon fruit puree. Use a strainer to remove some of the dragon fruit seeds, leaving some that have been crushed.
Heat the dragon fruit puree over low heat, add 20g of gelatin powder, and stir constantly until the gelatin powder dissolves. Do not boil. Let the dragon fruit puree cool.
Add powdered sugar to the whipping cream and place the mixing bowl in a larger bowl of ice water. Beat the whipping cream at medium speed until it reaches 6.7 consistency, with a light pattern on the surface.
Add the whipped cream to the dragon fruit puree in three parts, quickly mix well until smooth and without lumps.
Pour the dragon fruit mousse mixture into the cake mold and gently shake to remove any large air bubbles.
Chill in the refrigerator for 3 hours. Freeze for an additional 20 minutes before removing from the mold.
Decorate the cake simply and beautifully.
