Hele Clay Pot Roasted Sweet Potato Cooking Steps
Wash the purple sweet potatoes and dry them.
Place a steaming rack in the middle of the clay pot.
Line the pot with 3 overlapping sheets of aluminum foil, pressing them tightly against the inner wall of the clay pot. Make sure the foil extends outside the pot to prevent water or sugar from dripping into the pot (the excess foil at the top should cover the edge of the pot).
Place the purple sweet potatoes in the pot.
Cover and cook over high heat for 15 minutes.
Reduce heat to the lowest setting and flip the sweet potatoes.
Roast over high heat for another 15 minutes.
Turn off the heat, keep the lid closed, and let the sweet potatoes continue to cook in the residual heat of the clay pot for another 10 minutes. If a chopstick can easily pierce the sweet potatoes, they are cooked through.
