【Henan】Passion Fruit Braised Pork Ribs Detailed Cooking Steps
Cut the pork ribs into small pieces and blanch them in boiling water. Remove the ribs when the foam floats to the surface, and rinse them with hot water to remove any remaining foam on the surface.
Heat a small amount of oil in a wok and stir-fry the ginger slices until fragrant. Then add the pork ribs and stir-fry.
When the surface of the ribs changes color, add a piece of rock sugar and continue stir-frying. Adding rock sugar can make the dish look redder and brighter, and also reduce the greasiness.
Continue stir-frying until the ribs turn red.
Add enough water to cover the ribs, bring to a boil over high heat, then reduce the heat to low and simmer for 1 hour.
When the soup has almost dried up, add salt and lemon juice.
Add a little soy sauce. I used light soy sauce because the ribs were already well-colored. I just added a little flavor, so I didn’t use dark soy sauce. If you don’t have light soy sauce, you can use regular soy sauce instead.
When the sauce has thickened, add the passion fruit pulp.
Stir-fry for about 2 minutes to let the passion fruit absorb the flavor, then remove from heat.
