Detailed Steps for Making Herbal Chicken
After cleaning the chicken.
Bring a pot of water to a boil, add a few slices of reishi mushrooms, blanch them briefly, then immediately remove them. Reishi mushrooms can be bitter, so if you enjoy a very bitter taste, you can cook them longer. Don’t discard the blanched reishi mushrooms; you can use them to make tea and not waste them.
The water in the pot after blanching the reishi mushrooms will have a slightly yellowish color.
At this point, add goji berries, red dates, American ginseng, ginger slices, and then add the chicken.
Bring to a boil over high heat. Add Shaoxing wine, salt, and a suitable amount of sugar to reduce bitterness. If you like bitterness, you can omit the sugar. Cover with a lid.
Reduce heat to low, simmer until the broth is rich, then add chicken bouillon.
