Detailed steps for making homemade osmanthus jelly
Prepare the ingredients: 6g dried osmanthus, 600ml water, and 3g agar soaked in water in advance. The agar can be soaked in water the night before and stored in the refrigerator. It can be used directly the next day.
Wrap the dried osmanthus in a tea bag and boil it with water. Add sugar to taste. The amount of sugar can be adjusted according to personal preference. I used 15g of sugar, and the jelly was not too sweet, with a slightly bitter taste. However, the osmanthus fragrance was strong and it paired well with milk tea without being too cloying. If you add some tea leaves and boil them with osmanthus, it becomes osmanthus tea jelly. You can experiment with different variations.
Remove the tea bag and add agar to the boiling osmanthus water. Stir until the agar dissolves.
After the agar dissolves, strain the osmanthus water and pour it into a container.
Sprinkle some osmanthus on top of the osmanthus water and let it cool. Then, refrigerate it.
Agar begins to solidify at temperatures below 40 degrees Celsius. However, it is more refreshing and cool when eaten after refrigeration. This is the osmanthus jelly after refrigeration.
Use a knife to cut the osmanthus jelly into squares in the container. The crystal-clear and fragrant osmanthus jelly is ready. It can be used to make cheese milk tea with fermented rice and osmanthus jelly, or it can be eaten as a dessert. The amount of sugar can be adjusted according to personal preference.
