150g low-gluten flour; 60g warm milk; 30g butter; 30g scallions; 10g white sesame seeds.

Steps for making Homemade Scallion Soda Crackers (Baked in Oven)
Prepare the ingredients. Chop the scallions finely and melt the butter in advance by heating it in water.
Heat the milk to a moderate temperature, about 30 degrees Celsius. Don’t forget to add the yeast!
Mix the low-gluten flour, sugar, salt, baking soda, scallions, and white sesame seeds in a bowl. Use a scraper to mix them evenly at first, then make a hole in the center and add the milk containing yeast. Knead the mixture by hand. If it is too thin, add some low-gluten flour.
Add the melted butter and continue kneading until the dough forms a ball shape.
Cover the dough with plastic wrap and let it rest for half an hour.
Roll out the dough into a round shape about 1-2mm thick (I admit I rolled it too thick). Cut it into square pieces with a knife or use a mold if you have one.
Place the pieces on a baking sheet and poke holes in them with a fork.
Let them rest for another 15 minutes.
Preheat the oven to 170 degrees Celsius for 5 minutes. Then bake the crackers on both upper and lower racks for 10-13 minutes.
