Add a pinch of salt and some water to the flour to form a soft dough. Let it rest for about half an hour.
Place the dough in a colander and soak it in water.
Knead the dough until it feels loose. Continue even if the dough seems to fall apart.
Change the water several times during the process until the water runs clear.
This is the soaked and rested seitan after half an hour.
Prepared pork filling.
Add cooking wine, salt, ginger juice, abalone sauce, white pepper, and Maggi seasoning sauce. Mix well.
Add ginger and scallion water gradually, stirring until fully absorbed each time.
