Detailed Steps for Making Homemade Sweet Rice Wine
Clean the glutinous rice and soak it overnight. The soaked rice should be easily crushed by hand.
Drain the water from the rice.
Line the steamer with a cloth and spread the soaked rice evenly on top. Use your fingers to poke several holes in the rice. Steam over high heat for about 35 minutes.
The steamed glutinous rice has distinct grains and a transparent color without any uncooked parts.
After cooling, mix the glutinous rice with cold water until it becomes loose.
Use half a package, 4g, of sweet wine qu.
Mix the sweet wine qu with cold water until it dissolves.
Add the sweet wine qu water to the glutinous rice and mix well.
Put the mixed glutinous rice into a clean container and press it down with a spoon to make it flat. Use a dumpling stick to poke a hole in the center. Cover with plastic wrap and let it ferment in a warm place.
With the temperature around 28 degrees Celsius, it will take about a day and a half for the fermentation to complete.
Transfer the wine to a clean, oil-free, and water-free bottle and store it in the refrigerator. Consume within a month.
