Detailed Steps for Making Homemade Sweet Rice Wine
Take two cups of glutinous rice, soak for about 12 hours
Remove the soaked glutinous rice, steam in an electric rice cooker for about 30 minutes until cooked and becomes relatively hard glutinous rice
Use chopsticks to break up the steamed glutinous rice to cool down
Add purified water (or cold boiled water) just enough to cover the glutinous rice, stir the rice with chopsticks, soon the added water will be absorbed by the glutinous rice
When the rice temperature drops and is no longer hot, add 2 grams of Angel Yeast (save a little to sprinkle on the top layer later), mix well
Dig a round hole in the middle of the bowl with chopsticks, then sprinkle a little yeast on the top layer of the glutinous rice
Cover with plastic wrap
I covered it with a large stainless steel bowl on top
Let it ferment at room temperature for 1-2 days (hot summer days). After about 24 hours, you can uncover the plastic wrap to check the fermentation progress. If you smell the aroma of wine and see rice wine forming, it’s ready. My rice wine fermented for about a day and a half, approximately 36 hours. When it’s done, the aroma of wine is delightful…
