Detailed Steps for Making Homemade Tapioca Pearls
Weigh all the ingredients and set aside.
Mix the measured water and brown sugar together.
Place the mixture on a ceramic stove and cook over low heat until the brown sugar dissolves, then bring to a boil over high heat.
As soon as the brown sugar water boils, immediately add half of the measured tapioca starch.
Remove the pot from the heat and stir until the tapioca starch is no longer visible.
Put the pot back on the electric stove and stir the mixture continuously over low heat. Be sure to stir constantly to prevent sticking to the bottom. Stir until the mixture becomes transparent, then add the remaining half of the starch, quickly stir and press.
Press until the mixture can form a ball, then remove from heat.
Transfer the dough to a silicone mat or pressing board.
Wearing gloves, knead the dough evenly until there is no dry powder or particles visible, as shown in the picture.
The successful dough should be elastic and have a stretchy texture when pulled apart, as shown in the picture.
Roll the kneaded dough into a long strip.
After dividing the dough, cover it with plastic wrap to prevent the surface from drying out.
Roll the small pieces of dough into thin, long strips and cut them into the desired size with a scraper.
Roll the cut tapioca pearls into balls, then evenly coat them with dry tapioca starch to prevent sticking. After finishing, seal them in a plastic bag.
