Detailed Steps for Making Honey Bean Purple Sweet Potato Toast
Purple sweet potatoes are rich in protein, fiber, amino acids, vitamins, and various minerals, as well as selenium and anthocyanins. Vitamin A can improve vision, and vitamin C can help with collagen synthesis. With so many benefits and the ease of obtaining purple sweet potatoes, we should eat more of them.
Ingredient Preparation
Place all the above ingredients except for the purple sweet potato powder and butter into a stand mixer, bread machine, or knead by hand until the dough reaches the expansion stage. Then add the butter and continue kneading until it reaches the complete stage (able to stretch out a thin film).
Take out 200g of the kneaded dough and knead in the purple sweet potato powder.
Cover with plastic wrap and let it ferment at room temperature for about 1-2 hours, or until the dough doubles in size depending on the temperature.
After the dough has fermented well, deflate it, shape it into a round ball, cover with plastic wrap, and let it rest for 10 minutes.
Divide the rested dough into oval shapes.
Roll up the dough, cover with plastic wrap, and let it rest for 10 minutes.
Roll out the plain dough into a rectangular shape, similar in width to the toast box. Then roll out the purple sweet potato dough slightly smaller in size than the plain dough.
Layer the purple sweet potato dough on top of the plain dough and sprinkle some honey beans on top.
Roll up from top to bottom, pinch the seams tightly, and place in a non-stick toast box.
Place in the oven with a cup of warm water, proof at 38 degrees Celsius.
When it is 80% proofed, remove it, preheat the oven to 175 degrees Celsius, and bake for 45 minutes.
Remove from the oven and let it cool.
