Detailed Steps for Making Hot Dog Bread Roll
Ingredients: Golden Bread Wheat Flour (high-gluten wheat flour) 140g, Milk 80g, Granulated sugar 20g, Butter 15g, Egg liquid 10g, Salt 1g, Dry yeast 1g, Hot dogs 2.
Add high-gluten flour, milk, granulated sugar, egg liquid, salt, and dry yeast to the chef machine, knead until the dough is stretchy, then add softened butter and knead at high speed until the dough reaches the expansion stage.
Knead the dough until smooth, place it in a bread tin, let it ferment at room temperature until it doubles in size, completing the first fermentation. To check if it has fermented well, lightly press a floured finger into the center of the dough – if it doesn’t spring back, it’s ready.
Deflate the fermented dough, divide it into 2 small doughs, shape them into rounds, and let them ferment for 20 minutes.
Take one of the doughs that has undergone intermediate fermentation, roll it into a long thin strip on a cutting board, then wrap the long strip around the hot dog in a spiral.
Line a baking tray with silicone paper, place the prepared hot dog rolls on the tray.
Place a tray of warm water in the oven, then place the baking tray on the upper rack of the oven, set the temperature to around 38 degrees Celsius and let it ferment for 45 minutes.
