Step 1: Boil the soup. Although there are soup base seasonings, it is absolutely not enough to use plain water! So I always boil two pots of bone soup each time. Why two pots? This is the bone soup that has been boiled for five hours in an electric sand pot. It melts in your mouth, and look at the color of the soup, it’s all white! It is prepared for making the first soup base; there is also another pot of bone soup, which is made using the “nutrient stew” function of an electric pressure cooker and boiled for an hour;
This is the soup base that I bought: two kinds, spicy and non-spicy, prepared for making a yin-yang hot pot;
Prepare the yin-yang hot pot;
You can’t cook the soup base seasonings directly, you have to stir-fry them to make them fragrant! Prepare scallions, ginger, garlic, and Sichuan peppercorns, because I like a little bit of numbness in the spicy flavor;
