Steps to Cook Yellow Croaker
Fresh yellow croaker.
Remove the head and intestines of the yellow croaker and wash it. Prepare 1 egg; mix salt, soy sauce, cooking wine, sugar, and vinegar to make a sauce and set aside.
Crack the egg open and mix well, set aside.
Coat the yellow croaker with the beaten egg mixture.
Fry the evenly coated yellow croaker in hot oil.
Fry until both sides are golden brown, then set aside.
Heat oil in a pan, stir-fry green onion, ginger, garlic, star anise, and chili pepper until fragrant.
Add the fried yellow croaker to the pan.
Pour in the prepared sauce. Simmer over low heat until well-flavored.
Once the sauce thickens, the delicious homemade yellow croaker is ready to be served.
