Step-by-Step Guide on How to Make Cake in Rice Cooker and Electric Pressure Cooker
Take 5 eggs (beginners can use 2 eggs to try), separate the egg yolks and egg whites, and put them in two separate oil-free and water-free containers. For those using 2 eggs, the ratio is 2 egg whites, 2 tablespoons of sugar, 50g of flour, and 62g of milk.
First, prepare the egg yolks. Beat the egg yolks with an egg beater, add 5 tablespoons of sugar, and mix well. Then add half a bag or half a box of milk. Stir and add all-purpose flour. Mix with the egg beater until there are no lumps. This is the egg yolk batter. Set it aside.
Use a spoon to add sugar and a sieve to add flour to the egg yolk batter.
Use a sieve to add flour to the egg yolk batter.
Now, let’s prepare the egg whites. It is very important to beat the egg whites properly, otherwise the cake will not rise. I use an electric egg beater, but if you use a manual egg beater, it will take longer and be more tiring. Beat the egg whites for a while, add half a tablespoon of sugar, beat for a while, then add another half tablespoon of sugar and a few drops of white vinegar (white vinegar can remove the egg smell). Beat for a while and add another half tablespoon of sugar (a total of 1 and a half tablespoons of sugar were added in three times).
To check if the egg whites are beaten properly, insert a chopstick or egg beater into the egg whites and see if it stands upright without falling. If it stands upright, it means the egg whites are beaten properly. If it falls, you need to continue beating. In the case of 2 eggs, add 1 tablespoon of sugar when beating the egg whites (also added in three times).
After the egg whites are beaten properly, we need to mix the egg yolks and egg whites together. First, pour half of the beaten egg whites into the egg yolk batter. Be careful not to stir in a circular motion, as this will destroy the bubbles in the egg whites and the cake will not rise. Instead, use an up-and-down motion to mix them evenly (or use a cross-cutting motion). Then pour the other half of the beaten egg whites and mix them evenly using the same method.
Use an up-and-down motion to mix the egg yolks and egg whites evenly. Do not stir in a circular motion! After mixing, the batter should look like this. Before steaming the cake in the rice cooker or electric pressure cooker, we need to remove the bubbles. To do this, lift the inner pot slightly and shake it a few times. Repeat this process a few times.
Now, we are ready to steam the cake. Take out the inner pot of the rice cooker or electric pressure cooker and brush it with salad oil. Brush a little more oil than usual, and leave some extra oil in the inner pot to make it easier to remove the cake. Put the inner pot back into the rice cooker or electric pressure cooker and heat it for about 2 minutes. Carefully remove the inner pot with a cloth.
Pour the batter into the heated inner pot.
I used this electric pressure cooker and pressed the “Cook Rice” button until it beeped. Then, cover the steam vent with a damp cloth (do not let the cloth drip) and let it sit for 20 minutes. During this process, you can open the lid and check the cake without affecting the cooking process. After 20 minutes, gently touch the cake or insert a toothpick into the cake and see if it comes out clean. If it does, the cake is done.
If you use a pressure cooker with buttons like this, press the “Cook Rice” button for 2 minutes, and the pressure cooker will automatically switch to the “Keep Warm” mode. Cover the steam vent with a damp cloth (do not let the cloth drip) and let it sit for 20 minutes. After 20 minutes, the pressure cooker will automatically switch back to the “Cook Rice” mode. Remove the damp cloth from the steam vent and let it cook for another 2 minutes. If your pressure cooker does not have automatic buttons, you will need to manually control the cooking process.
