Had some leftover rice from yesterday. Making fried rice would be too much for one person. Let’s make a snack instead. The rice should not be too dry, or it won’t hold its shape. I microwaved it for half a minute. Just half a minute is enough. Set it aside in a slightly larger bowl.
Gently break up the rice with a wooden spoon.
Add all the seasonings. Adjust according to personal taste. Add more of what you like.
Mix the rice well so that each grain is coated with the seasoning.
Place a layer of plastic wrap on a cutting board.
Spread the evenly mixed rice on top and gently press it flat.
Cover with plastic wrap and use a rolling pin to flatten the rice a bit more, making it neater.
Once the rice has cooled and hardened, use a knife to cut it into small squares.
Heat salad oil in a pan over medium heat. Fry a maximum of two pieces at a time. Place them in the pan and do not move them. After a minute or two, when they have completely formed and hardened, you can use chopsticks to flip them.
Fry them in batches until both sides are golden brown, then briefly fry on high heat for 10 seconds.
Plate them up. They are crispy and delicious. Really tasty. With a little effort, you can create something new and delicious with simple ingredients.
