Take 1 cup of flour, about 180g.
Add water and stir into a thick batter. (It should flow but not too easily.)
Add 2 eggs.
Stir evenly, no need to stir vigorously in one direction.
Add chopped scallions and salt, mix well.
Add 1 tbsp of hot oil.
Stir well, the batter should be very smooth and delicate. The consistency should be thinner than yogurt.
Heat a non-stick pan, brush with a thin layer of oil.
Pour in some batter.
