Detailed Steps for Making Tender Shredded Pork
Cut fresh pork tenderloin into thin slices.
Then cut into fine shreds.
Rinse with clean water and drain.
Add some light soy sauce, egg white, and cooking oil (I used corn oil). This step is crucial for making the shredded pork tender.
Put on disposable gloves, mix well, and let it sit for ten minutes.
Heat the wok with oil over low heat, add the pork shreds. The heat must not be too high, or the pork will become tough.
Quickly stir and separate the shreds with chopsticks. Turn off the heat.
Use the remaining heat of the wok to evenly cook the shreds until they turn white. Use a slotted spoon to remove the shreds.
Transfer to a bowl and set aside.
In a bowl, mix garlic paste with salt, light soy sauce, sesame oil, rice vinegar, and sesame paste. Stir well and set aside.
Wash and cut celery into two-inch sections.
Boil the green bean vermicelli in hot water for a while.
Remove and rinse with cold water.
Pour the prepared garlic paste over the vermicelli.
Mix well.
Heat oil in the wok, add ginger, scallion, and Sichuan peppercorns, stir-fry until fragrant.
Add celery sections and shredded small green chili pepper, stir-fry briefly.

(I ran out of dark soy sauce at home, so the color of the shredded pork is slightly lighter. But do not add too much dark soy sauce, as it will affect the color of the dish.)
