Method for Cake Flour: Place glutinous rice flour in a small plate, microwave on high for 1-2 minutes, this is used to prevent sticking when rolling out the dough.
Take a shallow dish, brush with salad oil evenly inside the dish, set aside.
Combine glutinous rice flour, tapioca flour, and sugar in a bowl, mix well, add milk, stir into a smooth batter without lumps.
Strain the batter, this will result in a smoother ice skin, pour the strained batter into the oiled shallow dish.
Steam over high heat for 15 minutes in a pot of boiling water.
After steaming, let it cool slightly, knead in butter or salad oil until smooth, wrap in plastic wrap, refrigerate.
Take a ripe piece of durian flesh, remove the seed, mash it with a fork.
Whip the whipping cream until soft peaks form, do not overwhip, refrigerate for later use.
Divide the chilled dough into equal portions, take a small piece and coat it with cake flour, dust your hands with cake flour as well, roll it out into a thin dough, similar to dumpling skin thickness.
