Italian Cheese Baked Eggplant Cooking Steps
Finely chop the garlic and a quarter of the onion; heat olive oil in a pan, sauté the garlic and onion, then add the ground meat (a mix of beef and pork is best) and sauté. Add red wine, let the alcohol evaporate, then pour in the Italian pasta sauce and simmer for half an hour.
The Italian meat sauce is ready. This sauce can also be used for other Italian pasta dishes.
Slice the eggplant horizontally, sprinkle with salt, and let it drain on a rack to remove excess moisture.
Sear in a skillet; set aside. Slice the remaining onion into strips and sauté until cooked. In a baking dish, layer eggplant and onion.
