Basil
Toast the pine nuts in the oven at 150°C for 5-6 minutes until cooked. Wash and dry the basil. Prepare the garlic.
Put the pine nuts, basil, garlic, Parmesan cheese, salt, a little olive oil into a food processor and grind quickly for 40 seconds. Do not grind too finely, some texture is good.
Pour the ground pesto into a bowl, then immediately pour a layer of olive oil on top to prevent the basil from oxidizing and changing color.
Boil water in a pot and cook the pasta, it usually takes about 10-12 minutes to cook until al dente. Once cooked, remove the pasta and boil the shrimp. Then pour 2 tablespoons of pesto, mix well and it’s ready to eat!
