Steps for Cooking Jade Watermelon Jelly
Extract watermelon juice.
Filter.
Add sugar and boil on high heat.
Add white agar powder.
Stir on low heat until the agar powder dissolves and the watermelon juice boils, then turn off the heat.
When slightly cooled, pour the mixture into a hollowed-out watermelon and let it cool naturally on the side.
Pour 500ml of purified water into a pot.
Boil the water.
Add a spoonful of matcha powder. This amount is a bit too much, resulting in a less vibrant green color.
Add an appropriate amount of sugar. You can add a bit more sugar if you like, otherwise it may taste slightly bitter. If you like the bitterness, you can add less sugar.
After the water boils, add an appropriate amount of white agar powder (the ratio is roughly 2.5 liters of water to 100g of agar powder), stir until the agar powder dissolves and the water boils, then turn off the heat.
When slightly cooled, pour the matcha water into the previously prepared watermelon. Chill in the refrigerator after it has cooled.
Slice and serve.
