Step-by-Step Cooking Instructions for Japanese Style Fried Shrimp
Wash the shrimp.
Remove the shrimp heads and pull out the veins while doing so. (If not skilled, veins can be removed separately)
Peel the shrimp shells, leaving the tails.
Take a shrimp, make a few cuts on the belly to cut the tendons, then press down on the back of the shrimp with your hand. (This is done to make the shrimp straight)
Process all the shrimp in the same way, put them in a bowl, add a pinch of salt and 1/2 tablespoon of cooking wine.
Add crushed ginger slices and spring onion whites, mix well and marinate for a while.
Prepare bread crumbs, egg liquid, and cornstarch.
Coat the marinated shrimp with a layer of cornstarch.
Then coat with a layer of egg liquid.
Finally, coat with a layer of bread crumbs.
Coat all the shrimp and place them on a plate.
Heat oil in a pan, when the oil temperature reaches about 60-70% hot, fry the shrimp until golden brown. Serve with tomato ketchup or mayonnaise, both are delicious.
