Detailed Steps for Making Jelly Eyeballs
Steam the sliced taro until cooked
Mix in granulated sugar while hot, use a spoon to avoid burning your hands
Add tapioca flour and water gradually, knead into a smooth and non-sticky dough (adjust the amount of tapioca flour and water based on consistency)
Divide the dough into 3 portions, add cocoa powder and watermelon flavor powder to two smaller portions
Knead into dough
Form eyeballs by combining small portions of dough (the larger portion for the eyeball center is about 20g, adjust as needed)
Assemble the eyeballs
Roll all into small balls, boil in boiling water for 20 minutes
Prepare a bowl of ice water on the side, immediately transfer the boiled eyeballs to the ice water for a firmer texture
Soak 45g of Sprite with 15g of gelatin powder, mix the remaining Sprite with Bacardi Cocktail and let it sit
Dissolve the soaked gelatin over hot water, pour into the Sprite and Bacardi Cocktail mixture, let the bubbles dissipate
For a scarier effect… make sure the eyeballs float, pour in some jelly solution first, freeze until set
Place the eyeballs, then pour in the remaining jelly solution, refrigerate until set
Finished product, use red food coloring to draw veins for a scarier look
