Steps for Cooking Jiangxi Fried Rice Noodles
Put the rice noodles in boiling water and cook for 6 minutes. Turn off the heat and let it sit for 3 minutes. Remove the noodles, rinse them off, and soak them in cold water for a while.
Add salt, cooking wine, dark soy sauce, pepper, and starch to the pork strips and mix well.
Soak the shiitake mushrooms and cut them into thin strips.
Heat the oil in the pan, add the soybean sprouts and stir-fry until 80% cooked, then remove them from the pan.
Beat the eggs, add them to the hot oil and stir-fry until cooked, then remove them from the pan.
Heat the oil in the pan, add the celery and stir-fry until 80% cooked, then remove it from the pan.
Stir-fry the cabbage until 80% cooked, then remove it from the pan.
