Steps for making Kiwi Cookies
Prepare all ingredients:
Soften the butter and mix with powdered sugar.
Beat the butter until the color becomes lighter, then add the egg liquid in batches. Beat well before adding the next batch.
Sift in the flour and mix with a rubber spatula.
Gently knead the dough.
Divide the dough into three portions: large, medium, and small, approximately 250g, 170g, and 110g, respectively.
Add matcha powder to the largest portion of dough, custard powder to the medium portion, and cocoa powder to the smallest portion. Knead gently to mix.
First, knead the custard powder dough into a cylinder with a diameter of about 2cm. Freeze for 5 minutes.
Roll out the matcha dough into a rectangle about 25cm x 9cm. The length should be similar to the dough in step 8.
Wrap the frozen custard dough cylinder with the matcha dough. Freeze for 5 minutes.
Roll out the cocoa dough into a rectangle about 25cm x 15cm.
Wrap the frozen matcha dough with the cocoa dough and wrap it with plastic wrap. Freeze for 5 minutes.
Take out the frozen dough and cut it into 0.5cm thick cookie dough. Brush with egg liquid and decorate with sesame seeds.
Preheat the air fryer to 170 degrees Celsius and bake for about 11 minutes. If using an oven, bake at 170 degrees Celsius for 20 minutes.
Seal the cooled cookies in an airtight container.
