Kunbo Roasted Sweet Potato – A Taste of Memory Cooking Steps
Prepare the sweet potatoes and all the necessary tools. Wipe the pot dry with a towel and place the grill in the pot.
Tear two pieces of aluminum foil, each a little longer. Stack the two pieces of aluminum foil in a “cross” shape. Fold the excess aluminum foil outside the pot so that the steam does not enter the pot.
Place the washed sweet potatoes in the pot.
Cover the pot and turn the electric stove to the highest heat, setting the timer for 40 minutes.
After the time is up, open the lid, remember to wear gloves. Use tongs to flip the sweet potatoes over and continue to cook on the highest heat, setting the timer for another 40 minutes. (The sweet potatoes I bought were too big, so I roasted them for a little longer. For normal-sized sweet potatoes, 25 minutes per side is sufficient.)
Don’t rush to take out the roasted sweet potatoes. Leave them in the pot and let them steam for another 15 minutes using the residual heat from the pot. This will make the sweet potatoes even more delicious.
