Detailed Steps for Cooking Lamb Chop Rice
Wash the rice and soak it in water for an hour in advance.
Cut the onions into small pieces, shred the purple onions, and cut the carrots into strips.
Cut the potatoes into medium-sized cubes and stir-fry them in a small fire until the surface is slightly burnt. Set aside.
It is best to soak the lamb chops in water for half an hour, wash them clean, and blanch them in boiling water. (You can also skip blanching and evenly rub the lamb chops with salt and Sichuan pepper, let them sit for half an hour, and then wash them clean).
Then wash and drain the lamb chops.
Pour an appropriate amount of peanut oil into the pan, add the onions and stir-fry until fragrant.
Add the lamb chops, stir-fry, add cooking wine and an appropriate amount of salt.
Add the carrot strips and stir-fry for a while, then pour in enough water to cover the lamb chops and more, and braise for about 30 minutes. Then spread the soaked rice and diced potatoes on top of the lamb chops without turning them over. Then simmer over low heat until the rice is almost cooked, add raisins, and use chopsticks to poke several holes in the rice to allow air to escape and make it easier to cook. It takes about 10-12 minutes.
Delicious food is actually very simple.
