This is the tapioca flour I bought
Melt the water and brown sugar, pour in 110g tapioca flour and stir quickly, then knead the dough without burning your hands, knead until the surface is smooth without dry powder particles. Roll into thin strips, cut into pearl-sized pieces, roll into balls as shown in the picture. Sprinkle a little dry powder to prevent sticking.
Boil in hot water until soft, immediately turn off the heat and cover for 2 minutes, then remove and place in ice water, you will see translucent pearls.
If you like the hanging cup effect, you need to cook the pearls in a starch slurry. I used 60g water and 40g brown sugar, melt and boil, then add the pearls and continue to simmer on low heat, be careful not to stick to the pot. Simmer until thick, you can test the viscosity by leaving a mark on a transparent cup. If done well, it should be better than my result.
