Wash the leek and cut it into 1-inch pieces. Cut the lean pork into thin strips and chop the ginger into small pieces. Set aside.
Mix the pork strips, bean powder, ginger, garlic, pickled peppers, and a little premium soy sauce together.
Heat the wok over high heat, add oil until it is 90% hot, and stir-fry the pork strips for 25 seconds. Remove from heat and set aside.
