Detailed Steps for Making Lemon Butter Roast Chicken
Brine the chicken in a 5% salt solution in the refrigerator overnight, then add freshly ground black pepper, salt, lemon juice, paprika, and garlic powder or minced garlic, rub the mixture evenly on the chicken inside and out, and marinate in the refrigerator overnight.
Pat the marinated chicken dry with kitchen paper towels until the skin is dry, stuff a lemon and onion chunks inside the chicken’s cavity, and seal with toothpicks.
Melt the butter in the microwave, paprika is optional.
Preheat the oven to 180 degrees Celsius.
Line a baking tray with aluminum foil, place onion chunks on it, brush butter on the chicken, roast in the lower part of the oven at 180 degrees for 20 minutes, reduce to 150 degrees for 30 minutes, then increase to 200 degrees for 10 minutes until the skin is crispy, flip once during cooking and brush with butter again, if using a rack, this step can be skipped.
