Detailed Steps for Cooking Lemon Duck
Ingredients. After washing the duck legs, marinate them with soy sauce, cooking wine, and ginger slices for about 6 hours. Chop the pickled ginger, pickled spicy peppers, and pickled sour radish and set aside.
Do not blanch the duck legs. I don’t like blanched duck legs as I feel they lose their flavor when blanched. Place the duck legs directly in the pan without adding oil. Stir-fry until the duck legs release oil.
During the stir-frying process, the duck legs will release duck juice. Pour out the duck juice and set aside. Stir-fry until the duck legs release oil, turn golden brown, and set aside.
Use the oil from stir-frying the duck legs to sauté the garlic, then add the chopped pickled ginger, pickled spicy peppers, and pickled sour radish. Stir-fry for 5 minutes until fragrant.
Add the lemon sauce and stir-fry until well combined.
Pour the duck leg meat into the pan, stir-fry with the seasonings, add oyster sauce, sugar, and the duck juice collected earlier. Simmer for about 10 minutes, then it’s ready to serve.
