Scrub the lemon peel with salt, then cut a thin layer of the lemon peel after washing it clean!
Finely chop the cut lemon peel and set aside!
Remove the lemon seeds and peel, leaving only the flesh!
Combine the chopped lemon peel and flesh, add brown sugar, and add enough water to cover the lemons!
Simmer on low heat for 30 minutes until thickened!
Let it cool a bit, then stir in 2 tbsp of honey until well combined!
