Step-by-step Cooking Instructions for Lemon Roasted Chicken Thighs
Place the chicken thighs in a bowl, add salt, black pepper, Sichuan peppercorn, and lemon zest.
Mix well.
Add a little barbecue sauce.
Mix well and marinate overnight.
Wrap in foil before roasting.
Preheat the oven to 200°C and roast for 1 hour.
Remove, replace the foil, and brush the chicken thighs with a mixture of oil and honey (mix one spoon of oil with one spoon of honey).
Place a few slices of lemon on top to enhance the flavor and reduce greasiness.
Return to the oven and roast until golden brown. I may have roasted mine a bit too long, but it turned out more flavorful this way.
The finished dish tastes really good.
