Detailed Steps for Cooking Lemon Spicy Chicken Feet
Wash the chicken feet and remove the nails.
Cut the chicken feet into small pieces. I cut one chicken foot into three sections.
Boil the chicken feet in water with scallion, ginger, cooking wine, and Sichuan peppercorn over high heat. After boiling for ten minutes, turn off the heat and let it simmer for seven to eight minutes.
Rinse the cooked chicken feet with warm water to remove any impurities. Then rinse with cold water a few times.
Prepare the sauce while soaking the chicken feet in ice water for at least half an hour. In a large bowl, mix white vinegar, soy sauce, sugar, and salt until the sugar and salt dissolve. Taste and adjust the seasoning to your liking. Add minced garlic, sliced Thai chili, and sliced lemon to the sauce and mix well.
Drain the chicken feet and add them to the sauce. Seal the bowl and marinate in the refrigerator for at least two hours, flipping the chicken feet occasionally. The longer you marinate, the more flavorful it will be.
Serve with chopped cilantro. The Lemon Spicy Chicken Feet are a delicious appetizer that pairs well with beer or wine.
