Ingredients:
Lemongrass: 2-3 stalks; Lime: half; Agar powder: appropriate amount.

Rock sugar: 50g; Water: 600ml.

Steps for making Lemongrass and Lime Jelly
600ml water, 2-3 stalks of lemongrass, half a lime, 50g rock sugar, appropriate amount of agar powder.
First, cut the lemongrass into sections and flatten them.
Pour water into a pot and bring it to a boil. Add rock sugar and cook until it dissolves.
Add the lemongrass and 1-2 slices of ginger if desired. Bring to a boil, then simmer on low heat for 30 minutes with the lid on.
After 30 minutes, remove the lemongrass and squeeze in an appropriate amount of lime juice.
At this point, the 600ml of water may have reduced to 300-400ml, so it’s best to measure it in a measuring cup and add agar powder according to a ratio of 1.4g per 100ml of water. Stir well while the water temperature is still above 90 degrees Celsius.
Once it has completely cooled, it will solidify. Refrigerate for better flavor.
Finally, add some decoration by serving it in a glass and garnishing with mango, strawberry, and mint leaves.
