Lemongrass Sweet and Spicy Grilled Fish Cooking Steps
Prepare the sweet and spicy sauce: Remove the seeds from the chili and peel the garlic. Put them in a pot with three times the amount of water. Bring to a boil over high heat, then simmer over low heat for twenty minutes. Add an appropriate amount of starch and fish sauce, stir into a paste, and add tomato sauce, rice vinegar, sugar, and salt. Bring to a boil and set aside.
Wash the fish and pat dry. Cut open the back and flatten it.
