Shred the pork tenderloin, marinate with egg white, cooking wine, and starch. (I used a bit more egg white than needed)
Blanch the bean curd skin in boiling water.
Julienne the cucumber and carrot.
Heat a small amount of oil in a pan, stir-fry the sweet sauce until fragrant.
Add the shredded pork to the pan and stir-fry until cooked.
Arrange some carrot and cucumber juliennes on the bean curd skin.
Roll up tightly and cut into diagonal slices.
Arrange in a circle along the edge of the plate.
Add the shredded pork on top.
Garnish with some shredded scallion.
