10g agar, one black tea bag and one green tea bag

30g caster sugar

Soak agar in 500ml water until softened

Soak litchi flesh in lightly salted water (diluted with cold water)

Pour half of the agar liquid into a small pot, add the black tea bag, heat on low heat, squeeze out the tea juice, and stir gently while pressing the tea bag (low heat prevents agar from sticking to the pot and allows the tea liquid to slowly dilute)

Heat on low heat until the tea broth darkens in color, agar completely melts, then remove from heat.

In another small pot, pour the remaining half of the agar liquid and repeat the same process with the green tea.

Immediately pour into jelly molds after removing from heat, place litchi at the bottom of the mold.

Let it cool slightly (at room temperature), then cover with plastic wrap and refrigerate for at least 2 hours or more until the jelly sets.
