Make sure to buy fresh live clams. After washing them with clean water, freeze them in the refrigerator for about 2 hours. The clams will magically open up. Use a small knife to remove the clam meat (this method ensures the best freshness and flavor).
Marinate the ground pork with premium soy sauce and oyster sauce for an hour. Wash the chive flowers and prepare the cleaned clam meat.
Chop the chives into small pieces. If you prefer a larger texture, leave the clam meat as is and add it to the filling. Marinate the ground pork until flavorful.
